School is out which means the reluctant teen is continually cruising the kitchen (I do feed him!!) looking for snacks to feed his bottomless appetite. I swear that boy has hollow legs! My strawberry and banana popsicle recipe has been his favourite for years now but he wanted to change it up a bit this year and learn how to make a popsicle himself. Time to experiment! He’s always been willing to be ‘product tester’ for my new recipes and it’s great that he now wants to lend a hand with such easy recipes.
With a glut of blueberries in the fridge, we decided to use them up in an easy 3 ingredient fruit popsicle recipe. There’s something very satisfying about tumbling jewel bright juicy berries into rich creamy yoghurt. Once they’re combined the colourful mixture looks amazing, tastes delicious and is a healthy treat.
This banana pancake recipe is perfect if you’re following a gluten-free, dairy-free, sugar-free diet! Banana pancakes are healthy, tasty and brilliant for toddlers and kids of all ages.
They are also the easiest and quickest healthy breakfast you can imagine, as they have just 3 ingredients. Bananas, protein powder and eggs. That’s it! Couldn’t be simpler.
The only downside is the time they need to sit in the freezer before hungry little people can tuck into them!
Did you know that one cup of blueberries gives you 25% of the dietary fibre you need each day and that they’re packed with anti-oxidants too? Perfect for growing kids and grown-ups alike!
How to Make a Popsicle
All you need to make these popsicles is to add blueberries, vanilla yoghurt and a littler agave nectar to your food processor, then blitz quickly. It’s nice to keep the mixture a little ‘chunky’ but you can blend until smooth if the kids won’t eat ‘lumpy bits’! Spoon the fruity mixture into popsicle molds and place in the freezer for 5-8 hours.
When you’re ready for a popsicle, run the bottom end of the mold under a warm tap and the popsicle will slide out easily. Enjoy!
Healthy, easy blueberry yoghurt popsicles are a breeze to make and packed with fruity goodness. These popsicles are refreshing and the perfect treat on a hot day. Enjoy!
- 1 1/2 cups fresh blueberries
- 1 1/2 cups vanilla yoghurt (I use alpro as it's dairy free)
- 1 tbsp agave nectar
Blitz the blueberries, yoghurt and agave nectar in a blender until combined, with the fruit retaining some shape
Carefully spoon the mixture into 6 popsicle molds, before adding the mold tops
Place the molds in the freezer and allow the popsicles to freeze completely before serving, about 5-8 hours
Once your popsicles are ready to serve, run the bottom of the popsicle molds under a warm tap to help release them from the molds.
