Roasted Sweet Potatoes Recipe – Satisfying and Gluten Free

My roasted sweet potatoes recipe is one I use a lot because sweet potatoes are the ultimate go-to comfort food in my family. There is something so good about the sweet taste and the brightly coloured flesh that just cheers you up. Ever since we made the change to a gluten free diet, we only have ‘white’ potatoes as a very occasional treat.

There are so many ways to serve roasted sweet potato, other than just plain old baked in the oven (although they are super-yummy too). Here’s how to cook the basic version:

Basic Roasted Sweet Potatoes Recipe

Preparation time: 5 minutes
Cooking time: 45 minutes
Serves 4

  • 4 medium sweet potatoes
  • 1/2 tsp sea salt
  • drizzle of olive oil
  • coarsely ground black pepper to taste

 Directions

  1. Heat oven to 200 C / 400 F.
  2. Line a baking sheet with foil and gently mist with the teeniest amount of olive oil
  3. Pierce each sweet potato with a fork 3 or 4 times (it’s very therapeutic if you’ve had a bad day!)
  4. Place the sweet potatoes on the foil lined baking sheet
  5. Bake for approx 45 minutes, or until soft (the skin should be loose and dark with crispy bits)

You can serve the roasted sweet potato immediately, slit open with a curl of butter and seasoned with salt and pepper. For us it has to be Lurpak or good old Jersey butter! Yummy

Here are a few tasty variations:

Roasted Sweet Potato with Roasted Garlic

Roast the sweet potato as above, adding 1 chopped roasted garlic clove per sweet potato 5 minutes before the end of cooking time. Serve the sweet potatoes whole or scoop out the flesh and served as mashed potato. This is really delicious as a topping for a cottage pie. So much nicer than the flavour of ‘normal’ mash!

Roasted Sweet Potato Cubes

Preparation time: 5 minutes
Cooking time: 30 minutes
Serves 4

Ingredients:

  • 4 medium sweet potatoes
  • 1/2 tsp sea salt
  • drizzle of olive oil and teeny drizzle of runny honey
  • 2 tsp sesame seeds
  • 1 tsp rosemary
  • coarsely ground black pepper to taste

 Directions

  1. Heat oven to 200 C / 400 F.
  2. Line a baking sheet with foil and gently mist with the teeniest amount of olive oil
  3. Cut the sweet potatoes into small cubes
  4. Place the cubes on the foil lined baking sheet and drizzle with olive oil and the little bit of honey (I always use Manuka honey)
  5. Sprinkle the rosemary and sesame seeds over the cubes
  6. Roast for approx 25-30 minutes, until soft and golden brown

Serve immediately. Perfect with hearty meat dishes or sausages.
